Pesto Dip

Ingredients:*

  • 6 oz Fresh Cilantro
  • 2 oz Fresh Parsley
  • 3 Red Chilies
  • 3 Garlic Cloves
  • 5 oz Shelled Pistachios
  • 3 oz Grated Parmesan Cheese
  • 2/3 cup Olive Oil
  • Juice of 4 Limes
  • 10 tablespoons Sour Cream

Steps:
  1. Put the cilantro and parsley into a blender or food processor until finely chopped.
  2. Halve the chilies lengthways, and remove their seeds. Add them to the herbs. Add the garlic as well.
  3. Add the pistachios and pulse the power until they are roughly chopped.
  4. Put mixture into a separate bowl and stir in the cheese, olive oil, and lime juice.
  5. After those are sufficiently stirred, add the sour cream and stir.
  6. Add salt and pepper to taste. Cover and chill the mixture until ready to serve.
